Dum arbi

tasty taro root dish

Ingredients vegetarian 4 servings


    • 1 kg arbi (Small Taro root)
    • 2 large onions( finely chopped)
    • 2 tomatoes (finely chopped)
    • 2 heaped tsp of finely chopped garlic
    • 2 cups semolina 
    • an inch of cinnamon
    • 4 green cardamoms
    • 4 cloves
    • 1 tsp garam massala powder
    • 1 tsp turmeric powder
    • 1 tsp cumin powder
    • 1 tsp corriander powder
    • 1/2 cup yougurt
    • 1/2 a lemon's juice
    • salt to taste
    • oil for frying
    • chopped green corriander for garnishing

    Directions

    1. Boil the arbi and peel it.
    2. Roll the arbi in semolina and deep fry in hot oil.
    3. Keep this aside.
    4. in a kadhai, heat 4 tsp of oil, add cinnamon, cardamoms, cloves and garlic..
    5. as the garlic becomes brown, add the onions and saute
    6. Once the onions are transparent, add tomatoes and stir.
    7. add all the dry spices and stir.add the yougurt and mix well.
    8. add the fried arbis and mix in the massala well.
    9. add little water and the lemon juice.
    10. put the lid on and let it cook on low flame.
    11. garnish with corriander and serve hot.
