Delicious and nutritious!
4 cups of finely chopped spinach.
2 small brinjals(cut into small pieces).
1 potato( cut into small pieces)
1 big onion (sliced)
2 green chillies
1 1/2 tsp methi seeds
2 tsp of finely chopped garlic
2 tsp green or red chilly paste
2 tbsp oil
Heat oil ,add methi seeds and chopped garlic, braise for 2 mins on low heat, add chopped onions and whole chillies. saute onions till golden brown.
Add potatoes ,brinjals and salt ,mix cover and cook on low heat for 3 mins ,add spinach and chilly paste ,mix ,cover it and let it cook on low heat till all vegetables soft and curry dry.
Serve with rotis.
