Simple Spinach curry.

Spinach curry with difference.

Delicious and nutritious!

Ingredients vegetarian 4 servings


    • 4 cups of finely chopped spinach.
    • 2 small brinjals(cut into small pieces).
    • 1 potato( cut into small pieces)
    • salt
    • 1 big onion (sliced)
    • 2 green chillies
    • 1 1/2 tsp methi seeds
    • 2 tsp of finely chopped garlic
    • 2 tsp green or red chilly paste
    • 2 tbsp oil

    Directions

    1. Heat oil ,add methi seeds and chopped garlic, braise for 2 mins on low heat,  add chopped onions and whole chillies. saute onions till golden brown.
    2. Add potatoes ,brinjals and salt ,mix cover and cook on low heat for 3 mins ,add spinach and chilly paste ,mix ,cover it and let it cook on low heat till all vegetables soft and curry dry.
    3. Serve with rotis.
