Ladies Finger Bajji

Besan flour coated bhindhis deep-fried in oil

U can also try this recipe with any one of the following ingredients- raw banana slices,potato slices,onion slices,bajji-chiilies,capsicum sllices,cauliflower, mushrooms,bread slices,paneer slices,boiled egg slices,fish fillets,etc.,

Ingredients vegetarian 4 servings

    • 12-15 big Ladies Fingers(Okra or Bhindhi)
    • 1 cup besan flour(Kadalai Mavu)
    • 1 tsp chilli powder
    • 1/2 tsp ajwain
    • 1/4 tsp baking soda
    • 1 tbsp rice flour
    • 1 tsp cumin seeds (Jeera)-coarsely powdered
    • 1/2 tsp asafoetida (hing)
    • 1/2 tsp curry and coriander leaves paste
    • 1 1/2 tsp salt - to taste
    • 150 ml refined Oil for frying
    • little more than 3/4 cup water


    1. Make a coarse powder of ajwain and cumin seeds. Add Asafoetida & little Salt to this powder. Mix well & keep aside.
    2. Make a semi-thick batter from the Besan and rice flour with 3/4 cup water or more. Add chilli powder, baking soda and Salt to it. Mix well.
    3. Add the ajwain and cumin seeds mix to this and mix well.Add the curry and coriander leaves paste and mix well.
    4. Heat oil in a kadai.Dip the ladies fingers completely in the batter and deep fry this till crispy & golden brown.
    5. Serve hot this Bhindhi Bajji with coconut chutney or tomato sauce.
    6. Note:u can buy any good ready-bajji mix and do this bajji too.

    U can try this recipe with Baby corn (but rub 1/2 tsp chat powder with a wet cloth and then 1/4 lemon over them before dipping them in the besanflour batter) and plain apple slices too.
