Samosa

Ingredients vegetarian 10 servings

  • 1 cup All Purpose Flour
  • 2 tbsps. Vegetable Oil
  • 2 nos. Potato, large, boiled
  • 1 no. Onion, chopped
  • 2 nos. Green Chilies, crushed
  • ½ tsp Ginger, crushed
  • ½ tsp Garlic, crushed
  • 1 tbsp Cilantro, finely chopped
  • ½ no. Lemon, juice
  • ½ no. Turmeric, powder
  • ½ tsp All spice powder
  • ½ tsp Red Chilies, powder
  • Salt to taste

Directions

    Dough :
  1. Mix together the flour, oil, salt and little water till crumbly.
  2. Keep adding little water kneading the mixture into soft pliable dough.
  3. Cover with moist cloth, keep aside for 15-20 minutes.
  4. Beat dough on worksurface and knead again. Re-cover.
  5. Filling :
  6. Heat 3 tbsp. oil, add ginger, green chilli, garlic, coriander seeds.
  7. Stir fry for a minute, add onion, saute till light brown.
  8. Add coriander, lemon, turmeric, salt, red chilli, garam masala.
  9. Stir fry for 2 minutes, add potatoes. Stir further 2 minutes.
  10. Cool. Keep aside.
  11. Divide the dough into 10 equal size pieces.
  12. Use the rolling pin to roll a piece into a 5" oval.
  13. Cut into two halves. Run a moist finger along diameter.
  14. Join and press together to make a cone.
  15. Place a tbsp. of filling in the cone and seal the third side using the moist finger.
  16. The samosas can now be deep fried on low to medium heat till light brown.
  17. Serve hot with chutneys or tomato sauce.

mix sesame oil while making a dough .it will make samosa more crisppier

I get crispy samosa by adding some ghee (for 1 cup of flour - 1tbs ghee and 1 tbs oil) to the flour and mixing it up well and later adding the exact amout of water to the flour for kneading to get a soft dough.

Samosas can be made crispy by adding oil (khee, dalda) , kneading in cold water and fry in slow flame

Just add warm oil to the flour and mix before ading water to the flour.

You will get crispy samosa if you fry on low heat and the wrapper should not be very thin. Very thin wrappers usually makes samosa soggy.

Make dough by using cold water so crest is crispy.

If you add 2tsp lemon juice in your dough and fry on low heat your samoosa will stay crispier for longer time.

I use the chinese spring roll pastry to as the casing. They are easy to fill and turn out crispy when fried.
