Bhagare Baigan

This is a very delicious dish and it is very popular in hyderabad. It can be eaten with rice and also roti.

Ingredients vegetarian 4 servings

  • ½ tsp Mustard seeds (black)
  • ½ tsp Turmeric Powder
  • 2 tsps. tamarind, paste
  • 1 tsp Ginger/Garlic paste
  • ½ no. Onion, chopped
  • 1 tbsp Coriander powder, powder
  • 1 tbsp Coconut, powder
  • 2 tsps. Cumin Seeds
  • 1 tbsp Sesame Seeds
  • Red Chili Powder to taste
  • Curry Leaf to taste


  1. First cut the eggplant in centre keep it salt water for 15min
  2. Take pan add oil in it and also add cumin seed and mustard seed ,curry leaves till then all thing turn into brown
  3. Then add eggplant in that pan fry till eggplant all changed the color.
  4. Grind rest of the spices and add into it. Keep stiring, add two cup water. Cook for 30min.
  5. Your bagare baigan is ready for eat.

this is a recipe for bhagare baigan, more masala is added to it, famous in hyderabad, I dont know why nisha has probs with a simple recipe.
