This rice is full of memeroy as I leaned it while I was studying in the UK from my Kurdish friend and her mum was an expert at making it.
Ingredients
vegetarian 4 servings
3 cup boiled & strained basmati rice ( the rice has to be cooked in salted water until more then half done 5-10 min)
1/2 cup fresh dill.
1 pack lima beans (cooked till 3/4 done & drained)
1/4 cup melted butter
salt to your taste.
Directions
Mix the rice, beans, dill weed & salt together until u can see the green & white colour combination.
Put around 2 tbsp butter at the bottom of a non stick pot then put the rice mixture over it.
Drizzle with left off melted butter all over the rice & cook covered with a tight lid over medium heat for 15 min, then low heat & cook for 30 min (like u would do with Biryani).
Do not stir at all.
Remove from heat & stand for 10 min.
Bring it out on a Rice dish & surround with golden crisp rice from the bottom & Serve hot with Kebabs & cucumber chutney.
