Hilbeh

Recipe by rabz of Dhaka, BD

This is kind of a spicy Yemeni relish which is eaten with Falafels, breads and used in many of their other recipes and my husbands sis- in law who is a Yemeni passed it on to us.

Ingredients vegetarian 4 servings

    • 2 c methi seeds
    • 1/2 cup water
    • 3 medium tomatoes (opt)
    • 2 cloves of water
    • 3/4 cup parsley
    • 1/2 tsp salt
    • 2 tsp lemon juice
    • 4 hot red pepper

    Directions

    1. Soak the Mehti seeds in 1/2 c water until a jelly type forms on the methi seeds approx(12 hours or more).
    2. In a chopper combine the Methi seeds, garlic, parsley and enough water & chop all  to a chunky chutney texture.
    3. Add pepper, lemon juice and salt & chop for 3 min.
    4. Put this in an air tight jar  and use when required to eat with bread, falafels or for other Yemeni dishes.

    * Some people tend to add tomatoes, caraway seeds or cardamom pods to adjust to their taste it is all opt. Some people also grind the seeds and then soak it.

It is very normal to have concerns about how recipes are published. Since khanakhazana is a community oriented site, there are huge number of recipes submitted that lack quality, have spelling errors, and sometimes are just not creative enough. They are still made available to everyone in the upcoming section, available for voting. Naturally, enough votes attract attention of editors to review, sometimes re-format and then publish the recipe. Reviewing, correcting and re-editing a recipe takes time and therefore recipes not having enough votes are generally not picked but recipes that are not run-of-the-mill, such as this one, are an exception to the rule

Hi Tina Hilbeh is an Arabic word which means methi seeds, @ Sunita Hi, I really don't run tis place. I give my recipes out of my own happiness and votes don't matter but few words of appreciation by others brings in joy.I know many on here are giving out wonderful recipes and I vote and post comments wen ever I find it interesting and new 2 me.I have had few recipes published with out any vote at all. Some contributors have asked about their recipes which were not published and were told by the Admin tat " Recipes are first selected for publishing based on the votes they receive in the upcoming section. Please check and send an email to admin if any of your recipes have reasonable number of votes (generally more than three). If your recipes do not get any votes and our reviewers think they are very creative, well formatted and original, they will be selected for publishing but it might take a while. Thanks!" And if the editors like it they will select it I guess even if it has no votes. This is all that I know off.Hope tat helped ur curiosity and if u have any other query u need 2 contact the Admin as I am just a participant like any others here. Cheers.
