Red cabbage salad

Enjoy this colourful salad and enjoy your diet with out being sorry.

Ingredients vegetarian 4 servings

    • 1 cup finely shredded red cabbage
    • 1/2 cup green cabbage
    • 1/4 cup thinly sliced avocado 
    • 1/4 cup cooked corn ( can can be used)
    • 1/4 cup thinly chopped French beans ( use cans if you like) 
    • 1/2 cup thinly sliced apple
    • 1/4 cup croutons (see recipe)
     For dressing:
    • 1 tsp mustard
    • 1 crushed garlic glove
    • 1 tsp  red chilli flakes
    • 3 tbsp olive oil
    • 4 tbsp lemon juice
    • salt and pepper to your taste


    1. In a bowl combine all the vegetables,.
    2. In another bowl combine all the dressing ingredients and whisk with a fork to get a smooth dressing.
    3. Just before serving, drizzle the dressing over the salad and toss all the veggies to coat it with the dressing.
    4. Top in with croutons and serve with your main dish or have it as it is.
