Burgul and chicken salad

Try this Mediterranean salad with a desi twist.

Ingredients non vegetarian 4 servings

    • 1/2 cup burgul*
    • 1 boneless cooked chicken tikka breast cut into small cubes.*
    • 1/2 cooked red kidney beans*
    • 1 hard tomato cut into small cubes*.
    • 1 cucumber cut into small cubes*
    • 2 spring onion finely chopped.*
    • 1 cup chopped cilantro*
    • 2 green chilli finely chopped.*
    For dressing:
    • 1/4 cup lemon juice
    • 2 cloves of crushed garlic
    • 2 tbsp olive oil
    • salt and pepper to your taste.
    • 1/4 tsp crushed Ajwain.


    1. Combine all the starred* items in a bowl.
    2. In another bowl combine the dressing items and whisk with a fork .
    3. Pour this over your salad items and toss to combine all.Bring out on a plate, decorate and serve.
