Fish Polau

Rice pilaf with fish

Fish polau is very famous in many countries. In our own house we make it in diff methods. Here is one of the ways we prepare it in and I am sure Fish lovers will love it.

Ingredients non vegetarian 6 servings


    • 6-8 Pieces of Rahoo or any fish you like.
    • 1/2 tsp turmeric
    • 1 tsp red chilli powder
    • 2 tbsp lemon juice
    • 2 tbsp curd
    • 1/2 tsp salt
    • 1/2 chaat masala.
    • 1/4 cup oil
    For rice:
    • 2 1/2 cup basmati rice (soaked for 1/2 hour)
    • 3 cup water
    • 1/4 cup oil
    • whole spice mix(5 cardamom, 1 cinnamon stick, 2 cloves, 1/2 jeera, 1/2 black pepper)
    • 2 onion thinly sliced.
    • 2 tomatoes  chopped.
    • 1/2 tsp garam masala
    • 1 tsp red chilli powder
    • Salt to adjust your taste ( I put 2 1/2 tbsp)
    • 1 large chopped Onion fried till golden & strained.
    • 4 tbsp chopped cilantro 
    • 2 chopped green chilli
    • 1/4 c upfried nuts(Cashew,almonds,pine)
    • 2 tbsp fried raisins  

    Directions

    1. Marinade the fish for 1 hour  in it's spices leaving out chaat masala.
    2. In a non stick pan heat the oil and place the fish, Fry on high till one side is golden then turn on to the other side.
    3. Once both sides are golden,sprinkle with chaat masala.And remove from heat.
    4.  In another pot heat the oil add the whole spices, fry the onion till golden brown.
    5. Add tomatoes, chilli powder and fry for 2 min. Add the water and bring it to the boil.
    6. Pour the rice and cook like Polau ( until water evaporates and rice is half cooked).
    7. Lower the heat place a tight lid  and cook over low flame(dum) until the rice is cooked(approx 20-25 min) yet grains are separable.
    8. Toss the rice once then take half of it out. 
    9. Spread the fried fish, fried onion, cilantro, green chilli, and fried nuts over the rice Cover it with the taken out rice again and cook over low flame for 10 min.
    10. Take out the rice carefully, making sure the fish does not break. & serve hot with Salads, ritas or chutney.

    as rabz, what a great recipe very unique and seems so delicious but if u sprinkle dill before giving a dum so i think taste will be more good. I will definatly try it. thx and tc
