Foul is the most popular dish in Egypt and they it is made in diff ways, It is also widely spread all over the Arab world as a breakfast or dinner item. It is a very good & healthy recipe for vegetarians as it is full of proteins.

Ingredients vegetarian 4 servings

    • 1 can Foul mudamis ( fava beans) or 1 1/2 c cooked fava beans ( just water and beans).
    • 2 cloves of garlic
    • 1/4 tsp black pepper
    • salt to adjust ur taste
    • 1 tbsp Tahini
    • 1/4 cup Arabian Chutney
    To garnish:
    • 2 tbsp feta cheese
    • 1/2 c chopped (tomatoes, cucumber, 1/2 green chilli, finely chopped onion, 1 tbsp parsley)
    • 3-4 tbsp olive oil
    • 1/2 tsp cumin powder


    1. Mash the beans in it's water.
    2. Add garlic, black pepper and salt and bring to the boil.
    3. Add the chutney and simmer for 5 min.
    4. Remove from heat add Tahini and toss twice.
    5. Bring out on a serving bowl and garnish, Add olive oil and sprinkle cumin powder.
    6. Serve with hot pita bread or any Arabian bread.

    Hi Rabz You are right this is sold at every corner in the Arab world. At the beginning I did not like it's taste but then when I had at some friends house with chutney it tasted so yummy that we often make it for dinner.Would you know how to make Ruz Bukahri by any chance? Thank you.



    The amount of water should not be more then 1 c in the beans and the fava beans should only be mashed slightly.
