Mix vegetable karahi

Ingredients vegetarian 4 servings

    • 500 g potatoes (cut into square shape)
    • 500 g egg plants (cut into square shape)
    • 250 g peas
    • 250 g turnips
    • 4 bunches of small fenugreek leaves (cut the roots and wash it properly)
    • 1 bunch of dill
    • 4-5 green chillies
    • 500 gm tomatoes
    • 1 tbsp garlic paste
    • 1/2 tsp turmeric powder
    • 1 tbsp red chilli powder
    • 4-5 curry leaves
    • 4 medium size chopped onion
    • salt to taste
    • oil as required


    1. Heat a oil in a pot and add onion when it turns into transparent then add garlic paste and stir it until onion are soft.
    2. Now add salt,turmeric and red chilli powder, stir it for few minutes.
    3. Add tomatoes when they are tendered then add potatoes,peas, turnips and pour 1 cup of water, cover it with a lid.
    4. When they are half cooked then add fenugreek leaves and stir it for 2 minutes.
    5. Now add egg plants and green chillies and cover it with a lid.
    6. Sprinkle dill and serve it with hot chapatis.
