Line a cookie sheet with foil. Place a wire rack in the pan, brush the rack lightly with oil and set aside. In a bowl combine the breasts with starred items and marinade for an hour.
Dip the chicken, one piece at a time, into the coating, then the egg, then again in the coat crumbs. Place the chicken on the rack. brush the top of the chicken lightly wit some oil. Bake until golden brown and cooked through, about 30 - 45 minutes.
Bring out on a plate and serve hot wit your choice of stir fried /steamed veggie and enjoy.
