Baked veggies

These veggies r delicious with roasts, one their own and 4 diets it is taught to me by my Brit friend.

Ingredients vegetarian 6 servings

    • 4 cup Veggies cut into thick 1/2 inch wedges ( Potatoes, pumpkins, Zucchini, sweet potatoes, cauliflower, Broccoli, carrots Onions) r best for baking.
    • 1 tsp dried Oregano
    • 3 tbsp fresh lemon juice
    • 1/2 tsp crushed red chilli
    • 1 clove garlic crushed
    • 1 tsp salt or adjust 2 your taste
    • 1/2 tsp black pepper.
    • 2 tbsp olive oil


    1. In a large baking dish combine everything and toss to coat all the veggies nicely. 
    2. Cover with a foil and marinade for 1 hour.
    3. pre heat your oven to 375 deg, make 2 -3 cuts in the foil and bake for 45 min.
    4. Remove the foil and bake for another 20/25 min until veggies are golden nicely.
    5. Serve hot with roasted chicken, or anything u like.
