Thai green chicken curry

Ingredients non vegetarian 2 servings

    400 gm chicken pieces , boneless, slightly cooked 3 tbsp oil 1 1/2 tbsp green curry paste, 2 green chillies, chopped, 4 cups thick coconut milk, 1 tsp sugar , 1 cup fresh green peas , cooked 1 tsp lemon grass, ground, pith discarded 1 tsp mint leaves, minced, salt to taste


    1. In a large pan , heat oil and stir fry curry paste in it. Add chillies and lemon grass paste. Add coconut milk , salt and sugar.
    2. When the mixture bubbles, add chicken and cook on a low flame till chicken is cooked.
    3. Add cooked peas and half the mint leaves. simmer till blended and serve hot.




    Green curry paste is pre-packaged paste available in most oriental grocery stores. I believe preparing the paste at home is rather involving and it is much easier to buy this instead.
