This is one of the dishes u can prepare wit left over roties mince or veggies but tis is how I prepare it and everyone at home loves it.
Ingredients
non vegetarian 6 servings
3 tbsp oil
1/2 kg mince of ur choice
1 Onion finely chopped
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp garam masala(all spice) powder
1 tbsp tomato puree
1 tbsp lemon juice.
1/4 c chopped parsley.
2 egg plants cut into circles and fried in little oil till golden
4-5 Syrian (pita) Bread cut into 1' squares
11/2 c bachamel sauce (white sauce)
1/2 c chicken stock
1 beaten egg
1/4 c pine nuts
Directions
Spread the pita squares on a baking tray and bake till light golden and crisp.
Heat oil in a pan and fry the onion till transparent, add mince, and fry, add the spices, tomato puree and toss fry till mince is cooked.
Just before removing from heat add lemon juice and parsley and toss twice, set aside to cool( the end product should be juicy).
Take a baking dish add in layers: toasted pita, half the mince, half off fried egg plants, pour half the chicken stock then half the white sauce, repeat and keep the top layer white sauce.
Pour the beaten egg over it and sprinkle with pine nuts.
Bake in the oven just till the top is golden.
Remove from heat and serve hot with Arabian Salads.
