Rass Malai

Recipe by Saleem Ahmed of Karachi, PK

Ingredients non vegetarian 6 servings


    • 1 cup Powder Milk
    • 2 tbsp Flour (Maida)
    • 1 tsp Baking Powder
    • 1 Whipped Egg (for Kneading)
    • 2lt Fresh Milk
    • 8 - 10  Elaichi
    • Crushed Badam and Pista
    • Sugar to taste

    Directions

    1. Mix  Powder Milk, Maida, Baking powder in a bowl and knead this mixture with Whipped egg until its become soft.
    2. Make  a small ball and press it with hands and make round shape and keep it side in try or plate. you can make 10 to 12 balls of that mixture.
    3. Put 2lt milk and Elaichi in a wide fry pan or any pot (must be wide).
    4. When milk comes to boil put sugar (to tast) in it and stir in low Heat till 5 to 10 minutes.
    5. Put all balls in that bowling milk. (make sure that all balls are separate).
    6. Let all balls to cook in that milk about 45 to 60 minutes. (on Low Heat)
    7. When Balls become double of their own sizes, take off from Stove.
    8. Take out in wide dish and put crush badam and Pista on it and keep in a fridge.
    9. Serve it cool.

    Dear Sami...may be backing powder is extra and flour is less in mixture...When you makes balls...makes very small and press hard between 2 hands to make thin Tikkyas...if Tikkyas will thik then it will not cook inside..Thank you..

    its vry nice but my balls becum soft and break in the milk kindly let me know where im wrong im vry upset and the balls dint cook very well from inside but taste nice waitin for reply

    Dear Tina..Thanks for Comments...may be Baking Powder is less in your mixture...or don't only use milk to knead, use paste of skimmed milk powder and milk to knead...and also put 1/2 Tesp of soda (Biocarbonate Soad.....in Urdu we called Kahny wala Soda)...I hope your Rass Malai will not shrink this time..     Mr.Ahmed,i tried making this recepie, unfortunately the rass malai almost shrunk back to its original size as the milk cooled.Could you advice what would have gone wrong??? I used milk to knead instead of an egg as i am a vegetarian. Would this be the reason.However, it tasted pretty good & the rass malai was soft.

    Thanks Shweta..?You can use Skimmed milk powder or milk but add 1 tbsp of flour more in the mixture..thanks again.

    Awesome recipe, dear Saleem ahmed. Keep posting recipes with similar calibre. Meanwhile, just an opinion..., how about using a combination of skimmed milk powder and milk [ weighing just 75 gms when both mixed together] , in place of an egg, for vegetarians like us? Cheers.
