Fried stuffed dumplings

Ingredients vegetarian 4 servings


    Refined flour 200 gms. Vegetable Oil 3 tbsp. Boiled Potato (diced) 250 gms. Green peas 1/2 cup Chopped ginger 1 tbsp. Chopped green chili 1 tsp. Cumin seeds 1 tsp. coriander powder 1 tsp. chat masala 1 tsp. Chopped green coriander 1 tbsp. Oil 2 tbsp. Oil for deep frying Salt As per taste

    Directions

    1. Mix flour, oil and salt in a bowl, add water in small quantities and make a hard dough and keep it under a wet cloth for 10 - 15 minutes.
    2. Heat oil, add cumin seeds and when they start to change color, add chopped ginger, chopped green chilies and then add diced potatoes. Add coriander powder, salt and chat masala. Mix well.
    3. Add green peas and cook further for 5 minutes on a slow flame.
    4. Add chopped coriander leaves and let it cool.
    5. Divide the dough into 16 equal portions and make them into small balls. Use a little flour and roll them into 5 inch long in elliptical shape. (Flour prevents sticking)
    6. Cut each elliptical into half and apply water on the edges. Shape it into a cone and stuff it with the potatoes and peas filling. Seal the edges and deep fry in medium hot oil till crisp and golden brown.
    7. Serve hot with tomato ketchup or Tamarind chutney.

    by corn flour do you mean corn starch. Cornflour is usually very coarse. So I guess you mean all purpose flor 1 cup and corn starch 1 cup. Am I right? UP

    hi suchi. just needed to confirm it is cornflour or maida for dough. or else u mean to add little cornflour to the maida for making crispier samosa. and if yes is it, 1 cup of cornflour to be added to maida. plz revert soon. i have guests to come home and need to make it. thank u.

    Hi Indie, for making dough just take 1 cup corn flour, salt to taste, ajvain seeds / cumin seeds, 3tps oil and water. try it and share the result.

    i tried it. use Cornflour for making dough.. it will make samosa very crispy..need nt to add anything else

    hi manisha,u mean do we add lemon juice in the dough or potato filling ?

    If you want to make samosa pur crispier add little lemonjuice in it and fry it on a but midium heat.

    I have not tried this but i am sure adding a little semolina in wheat flour will make the samosa more crisp and will stay crisp for long.
