This recipe was given to me by my wife who takes good care of her health. Hope you all like it like I do.
Ingredients
vegetarian 6 servings
2 .5 c light warm low fat milk.
6 egg yolks + 2 eggs
3/4 c light brown sugar
For caramel:
1 tsbp margarine
3 tbsp light brown sugar
Directions
Beat sugar and eggs together then add in the milk and beat for another 3 min and set aside.
Heat sugar and caramelise it with the butter.
pour the caramel in your baking dish and allow to cool.
Pour over it (slowly) the milk mixture and cover it wit a foil.
On a baking tray pour around 1 c water and and bake the covered pudding for approx 45min -1 hour in a 180-deg oven.( if the water decreases add water on your baking tray and continue to bake).
Remove from heat and let it cool.
Put in the refrigerator to allow the pudding to set nicely.
Loosen the sides and put the pudding dish on a larger plate and turn it up side down.
