Mangalore pumpkin payasam.

Ingredients vegetarian 6 servings


    • 1  medium size ripe pumpkin. (cut in small cubes)
    • 1 liter Milk
    • 1 ½ cup Dry fruits, roasted in ghee
    • 2 cups Jaggery
    • 7-9 tsp Ghee
    • 4 cardamom
    • 1 cinnamon
    • 1 tin condensed milk

    Directions

    1. First boil the milk and add pumpkin to it and cook for 20 min.
    2. then mash the pumpkin finely and set aside.
    3. in a pan heat little water and add jagger into it and cook it till it come's to liquid form,then stain it and set it aside.
    4. then take a pan add ghee to it,then put cardamom & cinamon cook it for 1 min then add mashed pumpkin into it and fry itfor 5 to 7mins in ghee.
    5. next add liquid Jaggery to it and cook till it becomes thick,and remove it from gas.
    6. after 5 min add dry fruits & milk maid to it and give it a nice mix.
    7. then the manglore pumpkin payasam is ready.
    8. if you want you can serve it chilled by cooling the payasam in fridge for an hour or so.

      Sincerely, I have now totally forgotten of eating a dessert/pudding called mangalorean 'pumpkin paayasa' owing it to the fact that I left my native place as a small girl about 3 decades ago. So, thanks very much, for reminding me about the delicasy and sharing the recipe too.
