Karela Fry - Andhra Style

Karela cooked with a medley of spices to get that tangy and sweet taste. Best had with hot rice and ghee.

Ingredients vegetarian 2 servings


    • 1 long and big karela
    • 2 med. onions, chopped
    • 5-6 garlic cloves
    • few curry leaves
    • 2 tbsp. oil
    • ½ tsp. mustard seeds
    • 1 tsp. urad dal
    • 1 tsp. chana dal
    • pinch of asafoetida (hing)
    • salt to taste
    • ½ tsp turmeric powder
    • 1 tbsp red chili powder
    • 1 tbsp sugar

    Directions

    1. Scrape the Karela and slice finely. Add a tsp. salt and keep aside for an hour. Wash well.
    2. Heat oil in a pan and temper with the mustard seeds, urad dal, chana dal, asafoetida, and curry leaves.
    3. Add the chopped onion and garlic and saute till light brown.
    4. Add the sliced karela and fry for 2-3 minutes.
    5. Now add the salt, turmeric powder, red chilli powder and sugar and continue to stir on a low flame till it is soft and well cooked.
