Wok fried noodles

This is a popular dish in Malaysia and Singapore
Just omit the shrimp paste (and eggs) to make this dish in vegetarian
It is okay to use any noodles that you can soft fry such as fresh egg noodles. In oriental grocery stores you should be able to get Yaki Soba, wheat noodles or pancit canton. If nothing is available, I'd suggest that you even try with italian spaghetti. Just don't use the angel hair kind, the noodles have to be slightly thicker to enjoy the taste.
Help! I live in a small town in the middle of KS; my grocer does not carry yellow noodles. Could you suggest an alternative? I can get anything Italian, Udon, or rice sticks, but that's it.

regular onion. Quite honestly, if you have time to look up this recipe online, you
can also maybe take a few extra seconds and look up "shallots" on the net.
