Indian Mee Goreng

Wok fried noodles

Ingredients vegetarian 1 servings


    • 300 g Fresh yellow noodles
    • 2 small potatoes
    • 2 fresh red chillies
    • 2 fresh green chillies
    • 1 Onion
    • 1 Tomato
    • 2 eggs
    • 150 g bean sprouts
    • 70 g Napa cabbage (Chinese cabbage)
    • 3 tbsp Tomato sauce
    • 3 tbsp light soy sauce
    • 4 tbsp Cooking oil
    Ingredients for Gravy:
    • 6 tbsp cooking oil
    • 1 tsp sugar
    • ½ tsp salt
    • ½ tbsp shrimp paste (belacan)
    • 2 cloves garlic
    • 2 onions
    • 12 dried chillies 
    Garnishing Ingredients:
    • 1 Firm Tofu
    • 1 Green lime
    • Fried crispy shallots

    Directions

    1. Heat oil in wok and fry grounded ingredients until fragrant. Add in the sugar and salt.
    2. Remove from heat as soon as the mixture forms a ‘gravy like paste.
    3. In a clean wok, add 3 tbsp of oil. Fry onion slices until soft and fragrant.
    4. Toss in tomatoes and Napa cabbage.
    5. Add in bean sprouts and noodles and stir fry for 1 minute over a high fire.
    6. Then toss in the chillies, potatoes and sauces together. Lower heat.
    7. Push noodles to one side of wok. Add 1 tbsp of oil and scramble eggs. Sprinkle 1 tsp light soya sauce.
    8. Mix egg and noodles thoroughly. Add in the gravy-paste to taste.
    9. Stir fry over a very high fire for 1 minute.
    10. Dish noodles onto a serving plate. Garnish with fried crispy shallots and lime.

    Just omit the shrimp paste (and eggs) to make this dish in vegetarian

    It is okay to use any noodles that you can soft fry such as fresh egg noodles. In oriental grocery stores you should be able to get Yaki Soba, wheat noodles or pancit canton. If nothing is available, I'd suggest that you even try with italian spaghetti. Just don't use the angel hair kind, the noodles have to be slightly thicker to enjoy the taste.

    Help! I live in a small town in the middle of KS; my grocer does not carry yellow noodles. Could you suggest an alternative? I can get anything Italian, Udon, or rice sticks, but that's it. Thanks!

    chilly powder 2 teaspoons.curry powder 2 tablespoons.

    Shallots are a milder type of onion. They are much smaller and sweeter than a regular onion. Quite honestly, if you have time to look up this recipe online, you can also maybe take a few extra seconds and look up "shallots" on the net.
