Baigan Ka Bharta

Delicious dish called "Ringna no olo" in Gujarati.

This dish is my childhood favorite. It is my favorite coz it is my grandmom's recipe. It is a lip smacking dish, which reminds of home everytime I prepare it.

Ingredients vegetarian 2 servings


    2 big Eggplants 4 tbsp cooking oil 5 big cloves Garlic 1 Green chilli 2 tbsp Red chilli powder (per taste) 1 tsp Coriander powder 2 tsp Turmeric 3 tsp Tamarind paste fresh coriander Salt to taste

    Directions

    1. Wash the eggplants clean and dry them. Apply oil all over them and put them to roast on naked, high flame and keep turning them so that all the sides are perfectly roasted.
    2. Remove from the flame, peel the skin and mash it. Use a big spoon, ladle or hand.
    3. In a pan heat oil and fry garlic until it just starting to brown. Add green chilli which is slit in the middle but is not into 2 halves. Immediately add the mashed eggplant and mash it well again.
    4. Add salt, chilli powder, coriander powder, tuemeric and tamarind.
    5. Cover the pan and let it cook for about 5 mins. Do not add any water to it. Keep checking until the eggplant is well done.
    6. Garnish with freshly cut coriander.

    Serving Suggestion: Can be had with roti or puri.

    The Bharta can also b made using grill, where eggplant can b cooked at 200 degree celcius for half an hour..followed by frying in oil with onion,tomato,chilly and garlic.

    why only garlic and no other veg. like onion and tomatoes. why not adrak paste.
