Red Curry Paste

Thai curry mix

Red curry paste can be prepared ahead of time and is very handy in preparing some thai dishes quickly. This is a vegetarian version.

Ingredients vegetarian 8 servings

    • 10 dry red chilies
    • 1tbsp Galangal
    • 2 tbsp Lemon grass (finely chopped)
    • 1 tsp Kaffir lime zest (chopped) 
    • 1 tsp Coriander roots (finely chopped)
    • 3 tbsp Shallot
    • 4 tbsp Garlic paste
    • 10 white peppercorns
    • 1 blade of Mace
    • ½ tsp Coriander seeds (roasted)
    • 1/4 tsp Cumin seeds (roasted)


    1. Grind all the ingredients of the paste till smooth.
    2. Heat oil in a deep pan. Add shallots and ground paste and saute.
    3. When the paste loses most of the water, turn off the heat. Let it cool.
    4. You can store this paste in refrigerator for upto a week or freeze it for upto 3-4 months.



    Hi girls, you can substitute ginger for galanghal and grated skin (without the white part) of lime for the lime leaves . All other ingredients are available. Try it. I make cubes of the paste and freeze it. It is a good addition to any veggie. Mot just thai...
