Coconut barfi

Ingredients vegetarian 4 servings


    • 2 cup grated coconut
    • 1½ cup sugar
    • 1 tbsp milk
    • 2 tsp elaichi powder
    • 10-12 cashews (broken into small pieces)
    • 1 tbsp ghee
    • little ghee to smear on the plate

    Directions

    1. Heat a heavy bottomed pan. add sugar,milk and grated coconut.mix well for a few minutes
    2. add cashews,and ghee and keep stirring till mix becomes thick and starts leaving the pan.
    3. remove from fire when the mixture starts leaving the sides of the panand pour into a greased plate.
    4. cut into desired shapes while still hot.
    5. will make about 20 pieces.

    my dad happens to like coconut barfi very much, when i made it he liked it VERY much.... I just added a bit of food colour and it became a funky orange colour!!!! really yummy!!!
