Spicy eggplant salad

fried/roasted eggplant slices

Slices of eggplant marinated and fried/roasted

Ingredients vegetarian 4 servings


    • 1 eggplant (brinjal)
    • 1 tbsp garlic paste
    • 1 tsp ginger paste
    • salt to taste
    • 1 tsp red chilli powder
    • 1 tsp cumin seeds
    • 1 tsp turmeric powder
    • 2 tbsp besan
    • finely chopped coriander leaves
    • finely chopped green chillies
    • finely chopped ginger
    • 1-2 lemons
    • water to make a thin paste
    • 3 tbsp refined oil

    Directions

    1. Cut thin slices of eggplant.
    2. In a bowl mix besan, ginger paste,garlic paste, salt, turmeric powder,red chilli powder and cumin seeds with water and make a thin paste.
    3. Dip eggplant slices in the paste.Keep aside for 15 minutes.
    4. Heat oil in a frying pan.Fry the marinated slices they become crisp.
    5. Garnish with chopped coriander,green chillies and ginger.
    6. Add one lemon juice and serve in a platter.

    Alternatively,you can roast the slices (after marinating) in a microwave and then garnish.

    u can roast it for 7 to 8 mins at 80% heat.

    Hi Farha, do let us know how much time do we have to put the eggplants in the microwave after marinating & at what % heat ( I mean generally the heat % in microwaves is given in 100%,80%,60%,40% & 20%).
