traditionally is made in plaintain leaf,apply oil and spread maida dough into small circle & place poli filling or poornam in the middle & cover it & in oily hand spread it to the shape of puri or roti
Ingredients
vegetarian 6 servings
For Maida Dough
2 cups Maida
1/2 cup Water
1 tsp Turmeric powder
1/2 tsp salt
3 tbsp Oil
For dusting :
maida flour or wheat flour
For poornam or poli filling
1 Cup Chana Dal
1/2 Cup Grated Coconut
1 Cup Grated Jaggery heaped (depending upon the sweetness of Jaggery)
1 tsp Elaichi Powder
10 Nos. Cashew Nuts
3 tbsp Ghee
1 tbsp for frying the filling
2 tbsp for greasing poli
Directions
Take maida in a bowl,add Turmeric powder,oil by adding enough water & make a soft dough.Cover it and keep it aside for 2 hours.Oil should come out of the dough.
Soak Chana Dal in water for half an hour and just boil it or Roast golden brown Chana dal and soak in hot water for half an hour.In this case,don't have to boil it.
First grind Chana Dal with Cashew nuts,Grated Coconut & at the end add jaggery.Run slowly twice in whipper mode.Don't add water.
Heat 1 tbsp ghee in a pan & add thick grinded paste,elaichi powder & fry till the paste becomes little dry.Stir continuously for 4-5 min. in medium flame.otherwise it will stick to the pan
Take the dough of small lemon size & make a small circle & in the middle place the filling of small lemon size and wrap it & roll it to puri or roti shape by dusting with maida flour or wheat flour.
Preheat the tawa and put the poli & roast pluffy till the brown spots appears on both sides.Grease ghee on both sides after removing from pan.
Tasty poli or Uputtu is ready.will get 25 polis.Serve hot and can keep for 2 days.
Note: If the ghee is applied when poli is in tawa,lot of smoke comes out of it even though we switch on the chimney. so better to apply ghee after removing from the pan.
