Uzhunthu Kazhi(Urad dhal sweet)

Urad Dhal flour cooked with Jaggery syrup in gingely oil

This popular Tamil Nadu dish is highly nutritious and mouth watering.Authentic preparation of this dish demands the use of Black Jaggery or Karuppu Katti(product of Palmyra Tree).An ideal substitute is jaggery used here.

Ingredients vegetarian 4 servings


    • 1/2 cup Urad dhal - soaked for an hour and ground without using water
    • 1 cup black jaggery or crushed jaggery -prepare jaggery syrup with 2 cups water and strain it
    • 1 tsp green cardamom powder
    • few - crushed cashews 
    • few raisins
    • 1 tbsp grated coconut
    • 1/2 tsp salt
    • 2 tsp ghee
    • 1/2 cup gingely oil

    Directions

    1. Heat gingely oil in a non-stick kadai ,add urad dhal flour which is prepared grinding soaked urad dhal without adding water.
    2. Add strained jaggery syrup and keep on stirring continuously.
    3. Add green cardamom powder and grated coconut .mix it well.
    4. When oil begins to separate ,after say about 8-9 mins,turn off the flame and close it with a lid and keep it aside.
    5. Now take a kadai and roast crushed cashews and raisins and garnish adding it on top of Urad dhal Kazhi.
    6. Serve it hot.Enjoy the tasty kazhi.

    soak and grind 2 tsp fenugreek seeds with urad dhal .Use gingely oil and black jaggery(if not the ordinary jaggery).Cook for about 15 mins .Add 2 tsp ghee and grated coconut and mix well before turning off the flame.
