Banana Stem Kootu

If the yoghurt is not sour,then can use 1/2 cup of tamarind extract from marble sized tamarind.if the (bottom)diameter is max.1.5 then the stem will be very tender and easy to cut.no need of hing.

Ingredients vegetarian 4 servings


    • 2 cups tender Banana Stem(15-20 cms)
    • 1 tsp chana dal
    • 1 tsp raw rice
    • 1/2 tsp Jeera
    • 1/2 tsp Haldi
    • 3 Green chillis
    • 2 tbsp scraped Coconut
    • 1 tsp Coconut oil
    • 1 cup Yoghurt
    • 1/2 cup tamarind extract
    • 1/2 tsp pepper powder
    • 4 leaves Kadipatha
    • Salt,to taste
    • Butter milk(laban)for soaking
    • mustard for tempering is optional

    Directions

    1. Cut the tender banana stem into small squares or lengthwise of 1 inch by removing the thread with index finger and soak them in butter milk.
    2. Soak chana dal and rice & Grind chana dal,rice,jeera,green chillis and coconut into smooth paste.
    3. Drain the buttermilk water and put the banana stem into the pressure cooker.
    4. Add tamarind extract,haldi and salt and add the ground paste.Keep three whistles in the cooker.
    5. Add pepper powder, kadipatha, yoghurt and raw coconut oil to the kootu.
    6. If u want to temper with mustard can do so.
    7. This is a delicious kootu.We take with chapathi also.
    Pepper powder is optional. when sprinkled at the end gives flavour along with coconut oil.
