Sichuan Sauce

useful in many recipe.

Ingredients vegetarian 4 servings

    • 2 Green chillies
    • 2 spring onions
    • 1 inch ginger
    • 10 cloves of garlic
    • 2-3 inches stalk of celery
    • 10-12 red chillies
    • 1/2 cup oil
    • 1/2 cup vegetable stock
    • 3 tbsp tomato ketchup
    • salt as to taste
    • 2 tsp vinegar


    1. Wash, de stem and finely chopped green chillies. peel, wash and finely chopped spring onions, wash and finely chopped some of spring onion greens.
    2. Peel,wash and grate ginger.peel and finely chop two cloves of garlic.
    3. Wash and cut of celery stalk in to small pieces.
    4. Boil whole red chillies in to one cup of water for 5-7 minutes. peel the remaining garlic.
    5. Grind the whole red chillies and remaining cloves of garlic to a paste.
