Turi Bhaji

Ridge Gourd curry

Ingredients vegetarian 4 servings


    • 3 cups Turi (ridged gourd)
    • 2 onions, chopped
    • 2 tomatoes, chopped
    • 2 green chilli, chopped finely
    • 4 garlic cloves, chopped finely
    • 1 tsp red chilli powder
    • 1 tsp dania powder
    • 1/4 tsp haldi
    • Salt,to taste
    • 1 tbsp oil
    • 1 tsp coriander leaves

    Directions

    1. Wash and remove the skin of turi and chop them into small cubes.
    2. Heat oil in a pressure cooker and add onion,cloves and green chillies. Saute till light brown.
    3. Add turi,red chilli powder,dania powder, haldi and saute till tomato becomes tender & chilli powder aroma comes out. it will take just 2 minutes
    4. Add tomatoes and salt.Stir for 2 minutes.Add coriander leaves.
    5. Close the lid and pressure cook for 1 whistle.
    6. When u open after 10 minutes, turi would be tender and cooked.
    7. Sindhi Turi Bhaji is ready.

    Note:With the tender turi we can make chutney, by roasting the skin in oil with coconut and roasted tuvar dal, redchilli and salt.

    Noneed of the pressure cooker. It will get cooked as u move ahead with the cooking

    Turai contains a lot of water, there is no need to pressure cook really. It can be made on the stove top pan in 10 minutes at the most depending on the quantity of turai.
