Its better to mix the flour in the platform rather than a bowl.While flattening the dough,if u don't beat & toss,u can flatten it with rolling pin and apply oil on it and spread evenly.

Ingredients vegetarian 4 servings


    • 4 cups All purpose flour(maida)
    • water to knead the dough,approx 1 cup
    • 1 tsp sugar
    • 1 tsp salt
    • 1 cup refined oil

    Directions

    1. Sieve maida and in a kitchen platform,clean the surface and spread maida.
    2. Mix the flour with sugar,salt & little water at a time & raise gradually.Knead smoothly clockwise and make a dough.
    3. Knead for 10 minutes by beating it.It should be soft,smooth and elastic but not very loose.
    4. Grease with 2 tbsp oil and close with a wet cloth and above that close with a basin(Broad Bowl)
    5. Keep it for 2 hrs in room temperature.the dough would have been raised and shines.
    6. Grease 1 tbsp oil on the platform and again beat the dough and knead.
    7. Divide the dough into golf sized ball.
    8. Make 10-15 balls out of it.Number of balls depends on the size ur making.
    9. Now flatten the dough by beating and tossing,spread oil on flattened dough & make a thin paper,No need of making a round shape but should be spread evenly on all sides.
    10. make fleets from other end to ur side & apply oil in your palm to lengthen it like a rope.Just round and round (roll)like a coil gently so that layers doesn't stick to each other.
    11. Smear oil on the coil.Cover them with a wet cloth again for 20 minutes.
    12. Just before heating the tawa,Press the coil with the palm or rolling pin and flatten it.
    13. Heat the tawa and place the coil.shallow fry both sides with 1/2-1 tsp oil.Be sure that both sides are cooked well.otherwise layers will not be separated.
    14. Brown spots will be appearing and it will be of golden colour.
    15. Take 4 parotas and clap sidewards between the hands while hot to separate layers.
    16. Parota is ready.Serve with kurma.(kindly see kurma from my recipes)
    Note: While rolling it from two ends,two coils we get. it should join at the centre. Just keep one above the other.Keep aside & while making just press it lightly with the rolling pin and flatten and make parota
