Brinjal-Karamani Curry

Brinjal pieces and soaked Karamani cooked with spices

This Brinjal-Karamani Kootu is a popular dish of Tamil Nadu.This easy and tasty dish needs 15 mins microwave cooking-time only. Try this at home and post ur comments.

Ingredients vegetarian 4 servings


    • 5 good Brinjals - cut into bite size pieces
    • 2 tbsp fine coconut paste(ground with 2 green chillies,1/2 tsp cumin seeds,1 small onion and 1 garlic pearl)
    • 1/2 cup Karamani-Black-Eyed Peas (soaked overnight)
    • 1 tbsp finely chopped onions
    • 1/4 tsp turmeric powder
    • 2 whole red chillies
    • 1 tsp cumin seeds
    • 1/2 tsp mustard seeds
    • few curry leaves
    • few coriander leaves
    • 1 cup water
    • 2 tsp refined oil
    • 2 tsp or salt to taste

    Directions

    1. Take a microwave bowl and add mustard seeds,cumin seeds,chopped onions, whole red chillies,curry leaves and refined oil.Mix them well.Microwave high for a min.
    2. Mix all the other ingredients including 1 cup water and add this to the above bowl.Microwave this on high for 15 mins or till water evaporates(stirring atleast once in-between).
    3. Take the bowl out after 5 mins.
    4. Serve this Brinjal-Karamani curry hot with rice and sambar or karakuzhambu or Rasam or Curd or chapathi or Idli.
