Potato & burgul Kibbah

Ingredients non vegetarian 6 servings


    • 3 boiled then mashed potatoes
    • 3/4 cup burgul (washed & soaked in water 4, 15 min, then drained from water completely) 
    • 1/4 cup flour
    • 1 tsp salt
    • 1/4 tsp black pepper.
    For filling:
    • 1 tbsp oil
    • 1 chopped onion
    • 1/2 cup chopped apricot
    • 1/4 cup chopped Almonds
    • 1/4 cup chopped coriander
    • 2 chopped green chili
    • 1/2 tsp garam masala
    • 2 beaten eggs
    • 1 cup bread crumbs.
    •  oil for frying.

    Directions

    1. For the filling: heat the oil & fry the onion till transparent.
    2. add the apricot, almond & fry till light golden.
    3.  Add dhunya, chili & garam masala toss all to mix & remove from heat.
    4. allow this to cool
    5. In a bowl, combine the potatoes, burgul, flour, salt, pepper.
    6. take some potato mixture in the palm of your hands & roll to form a ball.
    7. Stuff the ball with the filling & close it .
    8. Roll & flatten the ball like you would do for a Tikkia.
    9. Do this until all the mixture & filling has finished
    10. Coat each cutlets with egg, then with crumbs
    11. Heat oil in a frying pan & fry the cutlets till golden on both sides.
    12. Serve as a side dish with polau.
