Muffins are like cup cakes except muffins fall in the bread family & r larger in size, where as cup cakes falls in the cake family and it can be covered with icing on the top.
non vegetarian 6 servings
1 1/2 cup flour*
1/2 tsp baking soda*
1/4 tsp baking powder*
1/4 tsp salt*
1/4 cup oil
1 cup sugar
1 beaten egg
1/4 tsp vanilla
1 shredded apple.
1/2 cup small pineapple chunks
1/4 cup water (use as much needed to make a thick batter)
sesame seeds or caster sugar
Filling: 1/2 cup thick custard
In a bowl shift all dry ingredients and set aside.
In another bowl add oil, sugar, vanilla, egg, apple and pineapple then mix to combine.
Mix the dry ingredients and stir to combine all well.
Add enough water to make a thick batter.
Divide the mixture in cup cake pans,put a layer of muffin mixture then put a tsp of custard in the centre then top it with a layer of muffin mixture again, sprinkle with sesame seeds & bake in pre heated oven for 30 - 45 min . ( the muffin cups should be 3/4 filled or muffins will pour out while baking).
Remove from oven and allow to cool for 10 min then bring then out of the pan.
Enjoy the custard filled muffins with tea or coffee.
