Fava beans parhata

This parhata is one of my my own inventions and it is full of good nutrients to make u moving all day long. U can do them with left over beans too.

Ingredients vegetarian 8 servings


    • 3 cup flour
    • 1 cup Egyptian dry fava beans ( soaked over night).
    • 6 tbsp oil
    • salt to your taste
    • 2 tbsp chili sauce for momo's (look here for recipe)
    • 1/4 cup curd
    • 1 tsp jeera
    •  2 tbsp finely chopped coriander leaves.
    • Enough water to make a semi firm dough.
    • 2 tbsp mozzarella for each parhata
    • 1 tbsp ghee for each parhata.

    Directions

    1. Put the beans in pressure cooker and cook for 4 whistles ( some beans take longer time to cook).
    2. Once the beans are very tender add salt, chili sauce & zira then mash the beans to mushy consistency   making sure  the water has evaporated.
    3. Remove from heat & allow to cool.
    4. In a bowl combine flour, oil, curd, green, bean mixture and just enough water then knead with hands or food processor to a semi firm dough.
    5. Set the dough aside for 30 min.
    6. Divide into 8 equal size balls & roll each ball into a parhata.
    7. Heat Tava & fry the parhatas until one side is brown then add ghee and turn to do the same with the other side.
    8. Just before removing from heat sprinkle the top side with 2 tbsp mozzarella and keep on tava for few sec to allow the cheese to melt.
    9. Do this with all the parhatas and serve hot with your choice of curry, Achar or chutney.
    * the  dough 4 this parhata is a bit sticky so just dust enough flour so it does not stick while u roll them.

    Hi Divya, fava beans = broad bean but not the green ones the brown ones North Africans use them allot. If u can't find them use red kidney beans and it will taste just as same. Hope that helped. Cheers.
