This is a Philippine purple yam cake was given to me by a friend Nurse in the gulf. The colour is magnetic and the taste of this cake is out of this world. I can never say no to this cake.
Ingredients
non vegetarian 8 servings
For cake
1 pack white cake mix
1/2 bottle purple yam jam
3 drops of red and blue food colour
Icing:
1 can condensed milk
1/2 bottle purple yam jam
50 gm butter
3 drops red food colour
4 drops blue food colour.
Directions
Make the cake as described in the box leaving the egg whites.
In another bowl beat the egg whites till soft peaks form.
Fold this, the food colour and the purple yam in with a spoon into your cake batter .
Grease a cake tin with oil and pour the batter.
Heat the oven to 350 deg and bake the cake for 30-45 min ( until you get a clean tooth pick once inserted).
Remove from heat and allow to cool completely.
Mean while beat the icing ingredients together and get a purple colour icing ( the amount of red and blue food colour can be inc to get the purple colour u wish).
Spread the icing over the cake decorate and serve.
You can put a layer of icing in the middle as well but then you will need to inc the amount of icing to double.
