Pasta shells in vegetable stew

My family's favourite dish on a winter evening.

Ingredients vegetarian 2 servings


    for stock: 1 bay leaf + 8 cloves of garlic + peels of 1 washed carrot + peels of 1 washed potato + 2 spring onion slices(take only white part) + 1/2 salgam slices + 10 pepper corns + 10 coriander leaves with stems + lemon grass leaves 8 inches cut into 1 inch pcs + 3 cups water
    • 1 cup pasta shells
    • 10 french beans diced and 3/4 cooked
    • 1 large potato diced and 3/4 cooked(remove skin)
    • 1 carrot diced and 3/4 cooked(remove skin)
    • 1 cup cauliflower florets 3/4 cooked
    • 1/2 cup green peas blanched
    • 11/2 tb.sp. butter
    • 1 onion finely chopped
    • 1 tb.sp. maida
    • 1/2 t.sp. black pepper pwd
    • 1/2 cup warm milk
    • a pinch of lemon zest
    • salt to taste 
    • water
    • 4 slice bread + 1 tbsp butter + 1 tbsp finely chopped green garlic

    Directions

    1. Stock:- Mix all the ingredients and bring it to boil.Cover and simmer for 20 min. Strain and keep aside.
    2. Boil 4 cups of water in a pan.Add 1/4 t.sp. salt and cook pasta al dante.
    3. Keep all the vegetables in 1 cup warm water.
    4. In a big sauce pan heat butter on a low flame.Add chopped onion and saute for 1 min.
    5. Add maida and cook till raw smell goes.
    6. Add stock + vegetables with water + salt + pepper pwd. and bring it to boil.
    7. After 5 min add pasta shells and milk and simmer for 10 min.
    8. Add a pinch of lemon zest and serve hot with garlic bread.
    9. Garlic bread:-Mix green garlic in butter,smear on bread and toast lightly.
