Its famous in all over Maharashtra, specially in Mumbai.
Ingredients
vegetarian 2 servings
5-6 pav
4 boiled & smashed potatoes
handful chopped coriander
few curry leaves
2 chopped green chilleis
1 tsp tamarind powder
1 tsp corindar seeds
1 chopped onion
pinch of asafoetida
1 tsp ginger-gralic paste
salt to taste
1 tsp cumin & mustard seeds
2 cup besan
1 tsp red chilly powder
1 tsp carom
oil to fry
3 tsp rosted & ground peanuts
Directions
Heat a pan with with 3 tsp oil. add cumin, mustard , coriender seeds & curry leaves. once they crackle add ginger-garlic paste, & green chilies. now add chopped onion & let it turns to brown color.
Now add salt & turmeric powder in it & then add smashed potatoes. mix it well.
Now add asafoetida & finally add few of coriander & remove it from fire.
Let the mixture get cool, once cool make flatten 5-6 balls of it.
Take besan in one bowl,add pinch of salt,turmeric & chilly powder.also add carom in it. add water & make a batter of it.
Dip balls in a batter & fry it on both sides (fry them on medium heat)
Cut the pav from one side up to the another end, but don't allow it to get separate.
Do the same for all pav & fry them on pan with oil for 1-2 min only.
Now sprinkle ground peanuts to the inner side of pav, place one vada on it & serve it.
Additionally serve it with fried, salted green chillies.
