Fried bhindi

bhindi filled with masala and fried

Easy to prepare and can be accompanied with rice or chapati.

Ingredients vegetarian 4 servings


    • 500 gms bhindi
    • 2 medium sized onions (finely cut)
    • 1 medium tomato (finely diced)
    • 1 tbsp anardhana
    • salt to taste
    • chilli powder to taste
    • green chillies 1 or 2 to taste (mixed into puree)
    • 2 tbsp oil

     

    Directions

    1. Wash and dry the bhindis then make a slit lengthwise
    2. Mix anardhana, salt, chilli powder, green chillies, tomato and onions.
    3. Fill bhindis with spices' paste and tie the bhindis with a thread.
    4. Keep aside the remaining paste.
    5. Heat oil in a frying pan and fry the vegetables on medium to low fire till they're cooked.
    6. Add the remaining paste to frying pan, cover and let cook on a very low fire for about 10-15 minutes till oil separates from the spices.

    Hi Jyoti, I usually take out the threads before serving. Since there are no knots, just unwrap the threads from bhindis, they come out by themselves.
