Mango Rice

Ingredients vegetarian 4 servings


    • 2 cups of cooked rice
    • 1  Raw Mango ( thothapuri variety),
    • 3 greenchillies
    • 1 bunch coriander leaves
    • 3 sticks curry leaves
    • a pinch of asoefoetida,
    • ½ tsp salt
    For seasoning:
    • 1 tsp mustard seeds,
    • a pinch of hing,
    • 1 tsp urad dha
    • 3 tbsp refined oil,
    • haldi- a pinch.

    Directions

    1. First of all grate the mango and keep aside.
    2. Make a fine paste of chillies, salt, coriander leaves, curry leaves and hing.
    3. In a thick bottomed vessel add refined oil, when heated add mustard seeds when it splits add urad dhal, 1 dry chilli, a pinch of hing.  Add the chilli paste into the seasoning and fry for 3-4 minutes, add haldi  and grated mango into this and cook for 3-4 mts and stir nicely.
    4. Now remove  the vessel from fire and keep aside.  Now  add the cxooked rice into this mixture  and mix it nicely and garnish with fresh coriander.
