Layered Egg Masala

This one is very different and very yummy...

Ingredients non vegetarian 2 servings

    • 4 Eggs
    • 2 Chopped medium sized onions
    • 1 tsp ginger grated
    • 2 chopped tomatoes
    • 1 tbsp coriander leave finely chopped
    • 1 tsp turmeric
    • Salt to taste
    • Red chilli to taste
    • 1 green chilli finely chopped
    • Some gram masala for garnish
    • 1.5 tbsp oil


    1. Add the oil in a frying pan.
    2. Now added grated ginger to it.
    3. Now add chopped onions to this, once they turn pinkish add chopped green chilli and then tomatoes to it.
    4. Let the tomatoes cook for sometime once they are done add turmeric, red chilli powder, salt and mix well. let it cook for a few more minutes once you see the gravy starts releasing oil, Spread the gravy evenly like a layer in the pan and now break the eggs and put them one by one above the gravy (do not beat the eggs ...)
    5. Now sprinkle some salt , garam masala and corainder on the eggs and cover the lid, simmer it and let it cook for some time till you see the eggs are done. They should have cooked.
    6. You are ready to go. Enjoy with roti, Naan or even bread....
