This was a simple & easy dish. I made it on my brother's b'day. Everyone liked it.
Ingredients
vegetarian 4 servings
4 Tortillas (10 inch)
1 tbsp Olive/Vegetable Oil
1 cup sliced Button Mushrooms
2 cups Spinach (Palak cut into strips)
1 cup thinly sliced Onion
1 cup thinly sliced Capsicum
1/2 cup boiled Sweet Corn
2 cloves minced Garlic
1 tbsp chopped Cilantro (Coriander)
1 cup Mozzarella cheese
Salt to taste
1/4 tsp Black Pepper powder
1/2 cup Tomato Ketchup
Directions
Heat Oil in a pan. Add Mushrooms, Onion, Capsicum, Garlic, Sweet Corn, Salt & Pepper. Stir well for 4-5 mins.
Reduce heat to low & add Spinach. Cook for a minute. Add Cilantro, mix well, remove & keep aside.
On a cooking sheet, place the Tortilla. On one side of the Tortilla, spread some vegetable mixture. On it spread some cheese & fold the other half over it.
Broil for 2 mins at 180 degree centigrade. Turn & broil for 2 mins on other side until the cheese melts. Cut into slices & Serve hot with Tomato Ketchup.
Note: Alternatively this can be done on a Griddle. Non-Veg lovers can add anything they like along with Vegetables.
