A traditional Andhra recipe that tastes good and liked by all
vegetarian 2 servings
1 big egg plant (brinjal)
small lemon-sized tamarind
2 tbsp oil
Half tsp mustard seeds
1 tbsp slit urad daal
Half tbsp chana daal
6-8 red chillies
salt to taste
Roast the egg plant on the stove in simmer.
Meanwhile soak tamarind in little water.
Heat oil in a kadai, add mustard, chana and urad dal, jeera, hing and red chillies and allow these to splutter and keep this aside. After it cools grind it in a mixer. Add soaked tamarind and grind again.
After the egg plant gets roasted, allow it to cool and remove the charred skin.
Now take this in a bowl and smash it.
Add salt and the ground paste to the smashed egg plant.
This spicy brinjal can be served with rice or roti.
