Kabsa

Kabsa is a very famous daily rice dish served in Gulf region.

Ingredients non vegetarian 4 servings


    • 2 cup basmati rice, soaked for 30 minutes
    • 1 chicken cut into 4 halves
    • 1/4 cup sunflower oil
    • 1 onion, diced
    • 3-4  tomatoes, finely diced
    • 1 tsp cumin powder
    • 4 green cardamom pods
    • 1/2 teaspoon black pepper
    • Salt to taste
    • 1 cinnamon stick
    • 4 cloves
    • 2 tbsp tomato paste
    • 1 black lime (dried )
    • 1 chicken stock cube
    • 4 cup water

    Directions

    1. In a pot heat oil & fry the onion until transparent
    2. Add tomatoes & spice fry for a min
    3. Add in Tomato paste, Chicken stock & lime.
    4. Add the chicken & toss all so that all the spices are coated well with the chicken.
    5. Pour the water & bring  it to the boil
    6. Let the chicken cook until tender approx 20 min.
    7. Remove the chicken from the broth & set aside.
    8. Add the rice to the stock & cook until all water has evapurated.
    9. lower the heat & cook for 25 min over low flame(like pilou) 
    10. Mean while heat 2 tbsp ghee & fry the chicken till golen.
    11. Once the rice is cooked, bring it out on a serving dish 
    12. set the chicken over it & if desired decorate with fried almonds or pine nut.
    13. Serve with Arabian chutney.

    ASAK Jamila, black lime is basically dried lime which could be found in spice shops or Arabian shops. Cheers.

    Hi rabz, your kabsa receipe is good. Pls explain what is black lime? Is there any substitute for this?
