Roasted lamb and veggie

These fancies are served at esp Occasions for your esp guests to enjoy your cooking.

Ingredients non vegetarian 8 servings

    • 1 leg of lamb
    • 1/4 tsp salt or adjust to your taste( keep in mind sauces have salt in it)
    • 1 tsp black pepper
    • 1 tbsp ginger garlic paste
    • 1/2 cup ketchup
    • 4 tbsp soy sauce
    • 2 tbsp worcestirshire sauce
    • 1/4 cup vinegar
    • 1/2 tsp paprika
    • 2 tbsp olive oil
    For veggie:
    • 1 bay leaf
    • 4 potatoes cut into 4 halves
    • 2 large Onion cut into thick slices
    • 2 c pumpkins cut into large cubes
    • 4 zucchini  cut into thick circles.
    • 1/2 dried Oregano 
    • 2 tbsp lemon juice
    • Salt and pepper to your taste.


    1. In a large tray Marinade the lamb in all it's ingredients prick all over with a fork for 20 min  and leave covered in the fridge for 2 days.
    2. After 2 days pre heat the oven to 250 deg. 
    3. Combine all the veggies and toss the ingredients together wrap in a foil and put it along side the lamb.
    4. Arrange you leg of lamb in a baking tray, cover with foil and bake for 2 -2 1/2 hours or until tender. 
    5. Remove the foil out of both , inc the oven temp and brown the lamb and vegetables from the out side make water has evaporated from them .
    6. Remove from oven and allow it to cool for 10 min.
    7. In a serving dish arrange the lamb in the centre of your dish and arrange the veggie all around it.
    8. Cut into thin pieces and serve to individuals with roasted vegetables.



    Nice recipe but as you said this is not a daily dish, so I will try it out in some up coming occasion in our house. Thank you.
