food of royalty... but can be prepared in record time by the on-the-go working mother...

  • 1 cup Besan (gram flour)
  • 1/2 cup Atta (wheat flour)
  • 1/4 cup Chhena (cottage cheese)
  • 3 tsp White oil
  • 1 1/2 tsp Chiili powder
  • 1 tsp Fried jeera powder
  • 1/2 tsp Ajwain
  • 1/4 tsp Hing powder
  • salt - to taste
  • ghee - as required

  1. mix all the ingredients together, except ghee, and make a dough. add very little water if required. stash it well and keep it standing for 1/2 to 1 hour.
  2. now make out small balls from this dough and roll them into thin and small chapatis.
  3. heat these chapatis on a tawa and roast them over fire, without allowing them to inflate.
  4. now these chapatis may be brushed lightly with ghee, if so liked.
  5. serve these hot with fried subzi or with yoghurt (lightly sour curd).
